The Most Delicious Protein Balls

I think we can call it an obsession at this point. I have constantly kept a stash of these in the fridge lately and my whole family loves them! They are our breakfast on the go, filling snack, pre or post workout…and anything in between. I CRAVE them - they are that good!

Ingredients:

4 cups organic instant oats

2 scoops OR 2 packets Vital Proteins Collagen Protein Powder

1/2 cup ground flax + chia (I use a Vanilla Maple flavored blend from Whole Foods)

1/4 c honey

2.5 c nut butter of your choice

2 tbsp vanilla extract

1 tbsp sea salt (i like flakey celtic sea salt)

1/2 c chocolate chips (I use dairy-free)

Mix all ingredients except for the chocolate chips, using a spoon. (I always make several miniature size ones before adding the chocolate chips and save them for my one year old!) Mix in chocolate chips and then shape into balls. I like to keep them small, so I can have more ;) About an inch in size. Place on a silpat or wax paper, on top of a cookie sheet and put them in the fridge for an hour to set. After they have set, store in a glass container in the fridge!
